This is what our cakes look like inside

Pick one and open the slice, layer by layer

Corte de la tarta de chocolate: bizcocho, ganache, mousse, glaseado espejo y crujiente / Cross-section of the chocolate cake: sponge, ganache, mousse, mirror glaze and crunch

Three chocolates, zero intention of sharing

      1. Bizcocho de chocolate oscuro, tierno y esponjoso / Dark chocolate sponge, tender and fluffy

Moist and intense, with pure cocoa: more chocolate than sponge.

      2. Ganache de chocolate negro, densa y aterciopelada / Dark chocolate ganache, dense and velvety

Melted chocolate and cream, so glossy you can see your face in it.

      3. Mousse de chocolate con leche, aireada y llena de burbujas / Milk chocolate mousse, airy and full of bubbles

Whipped by hand until it becomes a cloud of chocolate. It melts before you swallow.

      4. Glaseado espejo de chocolate con un goteo brillante / Chocolate mirror glaze with a glossy drip

A smooth, dark coat that runs over the edges without a single crack.

      5. Crujiente de barquillo, praliné y avellana / Crunchy wafer, praline and hazelnut layer

Cocoa nibs and toasted hazelnut: the crack you did not expect.

      How we make it

      • Mantequilla plegada dentro de la masa de hojaldre / Butter folded into puff pastry dough

        Laminating

Dough and butter, folded again and again until the pastry rises in thin, crisp layers.

      • Chocolate templado extendido sobre mármol / Tempered chocolate spread on marble

        Tempering

The chocolate is warmed and cooled until it is glossy and snaps when you break it.

      • Montaje de una tarta con crema y espátula / Assembling a cake with cream and a spatula

        Assembling

Layer by layer and by hand: sponge, filling and cream, until the cake stands up on its own.
